There is 40 cart total in Mario Kart World. Starting at 11, you will need to unlock the remaining 29 by playing the game.

How to unlock more carts/vehicles
When you play, Unlock your cart for every 100 copies you collect. unfortunately, The order in which you unlock your cart is randomso if you’re really burning for a dolphin dash bike, you might be first to unleash a bunch of other carts.
If you are playing single player mode, such as completing the Grand Prix, please note that after the match is over, a notification pop-up will appear on the main menu screen, with enough coins to unlock your cart.
If you are playing online multiplayer, the cart will unlock immediately (you can see it when you press the plus button and choose to change your character).
We found a buggy loop that drops this little coin around the DK pass area of a multiplayer lobby, like the free Roam, which followed to quickly collect coins.
